I am always looking for a quick and easy solution for dinner. My family loves pork roast, but I have such a hard time cooking like my grandma used too. Moist, flavorful and falling apart. Through trial and error I have come up with a great method for cooking pork loin roast that my family absolutely LOVES! Try it out this weekend. It is so easy and delicious!
1 Pork Loin Roast (3-4 lbs)
Wild Porcini Sea Salt (any salt will do: sea salt, kosher salt, but this salt adds an extra dimension of flavor)
Herbs De Provence (or your families favorite spice mix)
Preheat oven to 300 degrees. Rinse and pat dry your roast. Place in a 9×13 pan. Sprinkle your roast with the salt, turning to coat all sides. Sprinkle Herbs de Provence (available at Wiliams Sonoma – one crock will last you at least 1 year), and rotate roast to coat all sides, including the sides. Place in oven for 3-4 hours. Check with meat thermometer, ensuring that internal temperature is at least 165 degrees. Remove roast from oven and tent with foil for 10 minutes. Slice and serve!
**Notes - I do not trim the roast of fat prior to cooking. This makes for a more moist roast.
I highly recommend getting a crock of Herbs de Provence if your family likes pork. I used it in this recipe and on pork chops on the grill. My family loves it! Both the Herbs de Provence and Wild Porcini Sea Salt are available at Williams Sonoma.
